Dubai chocolate trend creates global pistachio shortage
Swiss chocolatiers face rising costs as viral Dubai chocolate trend drives up global pistachio prices.

The Dubai Chocolate Phenomenon
In 2021, British-Egyptian entrepreneur Sarah Hamouda revolutionized the chocolate industry with her innovative Dubai chocolate creation. As the founder of Dubai-based FIX Dessert Chocolatier, Hamouda combined pistachio cream, tahini, and kadayif (crispy pastry threads) to create what would become a global sensation. The creation remained relatively unknown until December 2023, when it exploded on social media platform TikTok through a viral video posted by influencer Maria Vehera, catalyzing a worldwide chocolate trend that would soon impact global pistachio markets.
Swiss Chocolate Makers Join the Trend
Swiss premium chocolate makers quickly recognized the potential of the Dubai chocolate trend. Lindt & Sprüngli made a strategic entry into the market with an exclusive release of 500 limited edition Dubai chocolate bars at their Kilchberg museum in November 2024. Priced at CHF14.95, these handcrafted bars contained an impressive 24% pistachio content. The overwhelming demand led to some bars being resold online for up to CHF400. Following this success, Lindt launched a mass-market version priced at CHF9.95. Similarly, Läderach joined the movement with their FrischSchoggi Dubai, implementing purchase limits of one 100g tablet per customer per day to manage the extraordinary demand.
Global Pistachio Market Impact
The Dubai chocolate trend has significantly disrupted the global pistachio market. Prices surged to $27.81 per kilogram in 2024, a dramatic increase from $17.00 in 2022. This price spike reflects the unprecedented demand from chocolate manufacturers worldwide rushing to create their own versions of Dubai chocolate. The trend's impact is particularly evident in the premium chocolate segment, where manufacturers are incorporating substantially higher quantities of pistachios than in their traditional products. For instance, Lindt's limited edition Dubai chocolate contains 65 pistachios per bar, compared to just four in their standard pistachio products.
Supply Chain Challenges
The surge in demand has created significant supply chain challenges for chocolate manufacturers. Läderach reported a 50% increase in their pistachio requirements since the trend began, though they've managed to maintain supply through established supplier relationships. While Lindt & Sprüngli has been more reserved about their supply situation, the company is closely monitoring the market. The situation highlights the delicate balance of global ingredient supply chains and their vulnerability to rapid shifts in consumer trends, particularly in the premium confectionery sector.
