Food Brewer's innovative process begins with harvesting cells from cocoa beans, which are then cultivated in a controlled laboratory environment. The cells are placed on a nutrient gel where they regenerate and form callus tissue. Through a sophisticated combination of biotechnology and artificial intelligence, specific cells are selected and transferred to bioreactors containing a nutrient-rich solution. After several weeks of growth, the resulting biomass is harvested, dried into cocoa powder, and roasted for chocolate production. Since its inception, Food Brewer has demonstrated remarkable growth, expanding from a small team to approximately 20 employees from diverse international backgrounds. A significant milestone was reached in February 2024 with the successful raising of over CHF5 million in initial funding.
